1. Prepare the Cream Cheese Filling
In a small bowl, stir together the softened cream cheese, 1 tablespoon sugar, and vanilla extract until smooth and creamy. This rich filling is what gives each roll-up its ācinnamon rollā core.
2. Flatten the Bread
Place the crustless bread slices on a clean surface and use a rolling pin to flatten each one to about 1/4-inch thickness. This makes the bread pliable and easier to roll without tearing.
3. Fill and Roll
Spread about 1 tablespoon of cream cheese mixture along one edge of a flattened bread slice. Roll up the slice tightly starting from the filled edge. Repeat with the remaining bread slices and filling.
4. Prepare Coating Station
In a shallow dish, whisk together the egg and milk until smooth. In a separate bowl, mix the remaining 2 tablespoons sugar with 1 teaspoon ground cinnamon and set aside.
