Ingredients
For the dough:
- 1 + 1/4 cups (150 g) flour
- 1 tablespoon granulated sugar
- A pinch of salt
- 115 g butter (cold, cubed)
- 3–4 tablespoons ice-cold water
For the filling:
- 3 ripe pears (thinly sliced)
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon ground ginger (optional but goes very well)
- 1 teaspoon lemon juice
For the topping:
- 1 tablespoon butter (in small pieces)
- 1 egg (for the edges)
- Optional: A pinch of brown sugar or powdered sugar for decoration
