Cinnamon Pear Galette Recipe

Instructions

1️⃣ Prepare the dough

  1. In a bowl, mix together 1 + 1/4 cups flour, 1 tablespoon granulated sugar, and a pinch of salt.
  2. Add 115 g cold, cubed butter to the bowl. Using your fingertips, rub the butter into the flour mixture until it resembles coarse sand. This creates the flaky texture in the dough.
  3. Slowly add 3–4 tablespoons of ice-cold water, mixing gently with a fork until the dough starts to come together. Avoid overworking the dough, as this can make it tough.
  4. Shape the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes to chill. This helps the dough firm up, making it easier to roll out.

2️⃣ Prepare the Pears

  1. While the dough is chilling, prepare the pear filling. Place 3 ripe pears (thinly sliced) into a bowl.
  2. Add 2 tablespoons granulated sugar, 1 tablespoon brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon ground ginger (if using), and 1 teaspoon lemon juice to the pears. Gently toss everything together, making sure the pears are well coated with the spices and sugars.
  3. Let the pear mixture sit for 5–10 minutes to allow the flavors to meld and the pears to release their sweet aroma.

3️⃣ Shaping the Galette

  1. Once the dough has rested, roll it out on a lightly floured surface into a rough circle (about 12 inches in diameter). Don’t worry about it being perfectly round—it’s a rustic dish!
  2. Transfer the rolled-out dough to a piece of parchment paper for easy handling.
  3. Arrange the pear slices in the center of the dough in a circular or flower-like pattern, leaving about 2 inches around the edges for folding.
  4. Fold the edges of the dough inward over the pears, creating a rustic crust. The folds don’t need to be perfect—this adds to the charm of the galette.
  5. Place small pieces of butter (about 1 tablespoon) on top of the pear filling to add richness and flavor as it bakes.

4️⃣ Baking

  1. Brush the edges of the dough with a beaten egg to give it a golden, shiny finish.
  2. If you want a bit of extra sweetness and a crispy texture, you can sprinkle a pinch of brown sugar on top of the dough before baking.
  3. Bake the galette in a preheated oven at 190°C (375°F) for 35–45 minutes, or until the dough is golden brown and the pears are soft and bubbly.
  4. Once baked, remove the galette from the oven and let it cool for a few minutes before serving. This will help the filling set.

✨ Serving Suggestion

  • Serve the galette warm, topped with a scoop of vanilla ice cream for the ultimate indulgence. The contrast of warm, spiced pears with cold, creamy ice cream is pure bliss.
  • For a simpler presentation, lightly sprinkle with powdered sugar to add a touch of elegance and sweetness.

📌 Tips

  • Using cold butter is key to achieving a crisp, flaky crust, so don’t skip this step!
  • Avoid overworking the dough to keep it light and tender.
  • Make sure the pears are ripe but not too soft, so they hold their shape during baking.

This Cinnamon Pear Galette offers the perfect balance of buttery, flaky crust and sweet, spiced pear filling. It’s a dessert that’s rustic yet elegant, and incredibly easy to prepare. Whether you’re enjoying it on a chilly autumn evening or as part of a holiday feast, this galette will surely become a favorite!
