Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper.
In a medium mixing bowl, combine the flour and cold butter. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
Roll out the dough on a lightly floured surface and press it into the pie dish. Trim any overhang and crimp the edges.
Prick the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes and set aside.
2️⃣ Make the Custard Filling
In a large bowl, whisk together the eggs, sugar, vanilla, cinnamon, and salt until well blended.
Slowly pour in the warmed milk while whisking continuously to temper the eggs and create a smooth mixture.
3️⃣ Assemble and Bake
Pour the custard mixture into the pre-baked crust.
Bake for 40–50 minutes, or until the center is just set and a knife inserted in the center comes out clean.
If the edges of the crust brown too quickly, cover them with foil halfway through baking.
