Christmas Eve Cinnamon-Vanilla Creamy Custard Pie

Instructions

1️⃣ Prepare the Crust

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish or line it with parchment paper.
  2. In a medium mixing bowl, combine the flour and cold butter. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together.
  4. Roll out the dough on a lightly floured surface and press it into the pie dish. Trim any overhang and crimp the edges.
  5. Prick the bottom with a fork to prevent bubbling. Pre-bake the crust for 10 minutes and set aside.

2️⃣ Make the Custard Filling

  1. In a large bowl, whisk together the eggs, sugar, vanilla, cinnamon, and salt until well blended.
  2. Slowly pour in the warmed milk while whisking continuously to temper the eggs and create a smooth mixture.

3️⃣ Assemble and Bake

  1. Pour the custard mixture into the pre-baked crust.
  2. Bake for 40–50 minutes, or until the center is just set and a knife inserted in the center comes out clean.
  3. If the edges of the crust brown too quickly, cover them with foil halfway through baking.

4️⃣ Cool and Serve
