Process cookies in a food processor until they resemble fine crumbs, like sand. You can use any chocolate cookie of your choice—Oreo or chocolate chip cookies work best.
Mix the crumbs with melted butter until fully combined.
Pour the mixture into a 20–22 cm (8–9 inch) springform pan and press it down firmly into an even layer using the bottom of a glass or spoon.
Place the crust in the freezer to firm up for 10–15 minutes while preparing the next layer.
2️⃣ Prepare the Ice Cream Layer
Let the vanilla ice cream soften at room temperature for about 5 minutes—just enough to make it mixable but not melted.
Stir in chocolate chips and optional chocolate pieces, mixing gently to distribute evenly.
Spoon the ice cream mixture over the frozen crust and spread evenly with a spatula.
3️⃣ Add the Chocolate Layer
Drizzle chocolate sauce or spread a thin layer of ganache over the top of the ice cream layer.
If desired, use a knife to lightly swirl the sauce or ganache for a decorative effect.
