Chocolate Gingerbread Loaf (Moist & Festive) Recipe

Instructions

  1. Make the batter: In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cocoa powder, ground ginger, cinnamon, nutmeg, cloves (if using), and salt. Set aside.
  2. In another bowl, whisk together the wet ingredients: brown sugar, granulated sugar, vegetable oil, eggs, molasses, warm milk, and vanilla extract. Mix until smooth and well combined.
  3. Combine the dry and wet ingredients: Slowly add the dry ingredients to the wet mixture. Gently fold the two together until just combined, being careful not to overmix. The batter should be smooth and thick.
  4. Prepare the pan and bake: Preheat your oven to 350°F (180°C). Grease and line a loaf pan with parchment paper to make it easier to remove the cake after baking. Pour the batter into the prepared pan, smoothing the top with a spatula. Tap the pan lightly on the counter to remove any air bubbles.
  5. Bake for 50–60 minutes, or until a skewer or toothpick inserted into the center comes out clean. The top should be golden brown and slightly firm to the touch.
  6. Make the ganache: While the loaf is baking, prepare the chocolate ganache. In a small saucepan, heat the heavy cream over medium heat until it’s hot but not boiling. Pour the hot cream over the semi-sweet chocolate in a heatproof bowl. Let it sit for 1 minute, then stir until the chocolate is fully melted and the ganache is smooth and glossy. Add the butter and whisk until incorporated.
  7. Cool the cake: Once the cake is done, remove it from the oven and allow it to cool in the pan for 10 minutes. Then, carefully lift the loaf out of the pan using the parchment paper and place it on a wire rack to cool completely.
  8. Assemble and decorate: Once the cake has cooled, pour the warm chocolate ganache over the top, letting it drip down the sides for a beautiful, glossy finish. Sprinkle sliced almonds, fresh cranberries, and rosemary sprigs on top to give the cake a festive, holiday look.
