Chocolate Chip Cookie Dough Ice Cream Cake Recipe

Ingredients

For the Cookie Base:

  • 2 cups (about 200g) chocolate chip cookies, crushed
  • ½ cup (115g) unsalted butter, melted

For the Edible Cookie Dough:

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (100g) brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour* (heat-treated)
  • 2 tbsp milk
  • ½ cup (90g) mini chocolate chips

For the Ice Cream Layer:

  • 1.5 quarts (about 1.4 L) vanilla ice cream, softened slightly (or use cookie dough ice cream for even more flavor)

Optional Toppings:

  • Chocolate ganache or fudge sauce
  • Whipped cream
  • Mini chocolate chip cookies or extra cookie dough balls
