Instructions
1️⃣ Make the Crust
- In a mixing bowl, combine the 2 cups of crushed chocolate chip cookies and ½ cup of melted butter until evenly mixed.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form a solid crust. Make sure to pack it tightly for a sturdy base.
- Place the pan in the freezer for 15–20 minutes to set the crust. This will help it firm up and hold together while you build the layers.
2️⃣ Prepare the Edible Cookie Dough
- In a medium bowl, cream together ½ cup softened butter, ½ cup brown sugar, and 2 tablespoons granulated sugar until light and fluffy. This will create the soft texture of the cookie dough.

- Roll the dough into small bite-sized balls or chunks and refrigerate until firm, about 15-20 minutes.
3️⃣ Assemble the Cake
- Once the cookie crust has set, spread half of the softened vanilla ice cream over the crust, smoothing it out to cover the entire base.
- Scatter half of the refrigerated edible cookie dough chunks evenly over the ice cream layer.
- Add the remaining ice cream on top and smooth the surface. Press the rest of the cookie dough into the top layer to create a rustic, cookie-filled topping.
- Cover the cake with plastic wrap or a lid and freeze for at least 4–6 hours, or overnight, until firm.
4️⃣ Decorate & Serve
- Once the cake is frozen and firm, remove it from the springform pan and place it on a serving plate.
- Drizzle with chocolate ganache or fudge sauce for an extra layer of richness. Add whipped cream on top for a creamy touch, or garnish with mini chocolate chip cookies or additional cookie dough balls.
- For the best presentation, slice the cake with a warm knife to ensure smooth cuts and serve immediately!

- For easier removal, line the bottom of the pan with parchment paper.
