Gently heat the bloomed gelatin in the microwave for a few seconds until dissolved—do not let it boil. In a mixing bowl, beat the cold heavy cream with powdered sugar until soft peaks form. Add the dissolved caramel sauce into the whipped cream mixture and fold until smooth and fully combined, being careful not to deflate the whipped cream.
  4. Assemble the dessert: Carefully pour the caramel mousse over the chilled caramel peanut layer. Smooth the top with a spatula to ensure an even layer. Refrigerate for at least 4 hours, or until the mousse is set and firm.
