Instructions
1. Preheat the Oven:
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or non-stick foil for easy cleanup.
2. Bake the Potatoes:
- Scrub potatoes well and pierce each one several times with a fork.
- Place directly on the oven rack and bake for 45–50 minutes, or until fork-tender.
- Remove from the oven and allow to cool slightly until safe to handle.
3. Scoop and Season:
- Cut the baked potatoes in half lengthwise. Using a spoon, scoop out most of the flesh, leaving a 1/4-inch layer inside the skins for structure. Reserve scooped potato for another use.
- Place potato skins in a large bowl. Toss with olive oil, ranch seasoning, garlic powder, salt, and pepper until evenly coated.
4. Crisp the Skins:
- Arrange the seasoned potato skins skin-side down on the prepared baking sheet.
- Bake for 15 minutes, or until golden brown and crispy.
