Cheesy Cauliflower Garlic Bread (Low Carb)

  1. Prepare the Cauliflower:
Steam the cauliflower rice until tender. After steaming, squeeze out as much water as possible using a clean kitchen towel or cheesecloth. This step is important to avoid excess moisture in the dough.
  2. Mix the Dough:
In a large bowl, combine the riced cauliflower, shredded mozzarella cheese, cream cheese, minced garlic, parsley, baking powder, and salt. Microwave the mixture for 1 minute, stir, then microwave for an additional 30 seconds. This helps the cheeses melt and bind the ingredients together.
  3. Add the Egg:
Once the mixture has cooled slightly, add the beaten egg and mix until it forms a soft dough. The egg helps hold everything together and gives the bread structure.
  4. Shape the Bread:
Transfer the dough to a piece of parchment paper and shape it into a flat “bread.” Use your hands or a spatula to flatten it into your desired size. Use a knife to lightly score slices across the top of the dough for easier serving.
  5. Optional Topping:
For extra flavor, brush the top of the bread with melted butter and sprinkle with garlic powder, parsley, and a little extra mozzarella cheese for an indulgent, cheesy topping.
  6. Bake the Bread:
Preheat your oven to 425°F (220°C) and bake the bread for 15 minutes, or until golden and bubbly. The top should be golden brown, and the cheese should be melted and slightly crispy.
  7. Serve:
Remove from the oven and let it cool slightly before cutting into slices. Serve warm with your favorite meal or enjoy on its own as a tasty low-carb snack!
