Cheesecake-Stuffed Red Velvet Cookies

3️⃣ Assemble the Cookies

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Proper heat ensures the cookies spread just enough while keeping the filling intact.
  2. Take about 1 ½ tablespoons of cookie dough and flatten it slightly in your hand. The dough should form a shallow cup to hold the frozen filling without tearing.
  3. Place one frozen cheesecake dollop in the center, then wrap the dough around it fully, sealing the edges well. Smooth it into a ball so the filling stays enclosed during baking.
  4. Repeat with the remaining dough and filling, spacing the cookies several centimeters apart on the baking sheet to allow for spreading.
