3️⃣ Assemble the Cookies
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. Proper heat ensures the cookies spread just enough while keeping the filling intact.
- Take about 1 ½ tablespoons of cookie dough and flatten it slightly in your hand. The dough should form a shallow cup to hold the frozen filling without tearing.
- Place one frozen cheesecake dollop in the center, then wrap the dough around it fully, sealing the edges well. Smooth it into a ball so the filling stays enclosed during baking.
- Repeat with the remaining dough and filling, spacing the cookies several centimeters apart on the baking sheet to allow for spreading.
