👨🍳 Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the cheesecake filling: In a bowl, mix softened cream cheese, sugar, and egg yolk until smooth and creamy. Set aside.
- Prepare the cookie dough: Slice or scoop the cookie dough into 1-tablespoon portions. Flatten half of the portions into disks to form the bottoms.
- Stuff the cookies: Add about 1 teaspoon of the cheesecake filling onto the center of each bottom disk. Flatten another piece of dough and place it on top, sealing the edges to fully enclose the filling.
- Bake: Place stuffed cookies onto the prepared baking sheet, spaced about 2 inches apart. Bake for 11–13 minutes, or until golden brown on the edges.
- Cool: Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack.
