Cheesecake-Stuffed Chocolate Chip Cookies Recipe

Instructions

1️⃣ Prepare the Cheesecake Filling

  1. In a small bowl, mix the softened cream cheese, sugar, and vanilla extract until the mixture becomes smooth, light, and silky.
  2. Using a teaspoon, scoop small amounts of the mixture and drop them onto a parchment-lined tray. Flatten slightly to form discs.
  3. Place the tray in the freezer for at least 20–30 minutes, or until the discs are firm. This will make them easier to wrap in dough.

2️⃣ Make the Cookie Dough

  1. In a large bowl, whisk together the melted (and slightly cooled) butter, brown sugar, and granulated sugar until glossy and well combined.
  2. Add the egg and vanilla extract, mixing until fully incorporated and smooth.
  3. Stir in the flour, baking soda, and salt. Mix just until the dough comes together—do not overmix.
  4. Fold in the chocolate chips evenly throughout the dough. It should feel soft and slightly sticky.

3️⃣ Assemble the Cookies

  1. Take about a tablespoon of cookie dough and flatten it into a disc in your hand.
  2. Place one frozen cheesecake filling disc in the center, then take another small amount of dough to cover the top.
  3. Seal the edges completely and roll gently into a ball. Repeat with remaining dough and filling.
  4. Chill the cookie balls for at least 20 minutes before baking to prevent spreading.
