👩🍳 Instructions
1️⃣ Prep
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
2️⃣ Mix Dry Ingredients
- In the bowl of a stand mixer or large mixing bowl, combine oats, flour, granulated sugar, brown sugar, coconut, salt, and baking soda.
- Mix on medium-low speed for about 1 minute until evenly distributed.
3️⃣ Prepare Wet Ingredients
- In a small saucepan over medium heat, melt the butter and corn syrup together.
- Let it gently boil for 1 minute, then remove from heat.
- With the mixer running on low, drizzle the warm butter-corn syrup mixture into the dry ingredients and mix to combine.
4️⃣ Add Egg & Finish Dough
- Crack in the egg and beat until a soft dough forms. The dough will be thick but pliable.
5️⃣ Scoop & Bake
- Roll dough into tablespoon-sized balls and place 2 inches apart on the prepared baking sheet.
- Lightly flatten the tops with your hand or the bottom of a glass.
- Bake for 10–11 minutes or until the edges are lightly golden and the centers are set but still soft.
6️⃣ Cool
