6. Coat in Cinnamon Sugar

- In a small bowl, mix the brown sugar, ground cinnamon, and optional granulated sugar for sparkle.
- Roll each dough ball in the cinnamon-sugar mixture until fully coated, gently pressing to help the coating adhere.
7. Bake
- Place the coated cookies on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
- Bake for 10–12 minutes, or until the edges turn golden brown and the centers are just set. The caramel inside should remain soft and gooey.
- Avoid overbaking, as this can cause the caramel to harden and the cookies to dry out.
8. Cool & Serve
