Broccoli Cheese Cornbread

👨‍🍳 Instructions

1️⃣ Prep the Dish

  • Preheat oven to 350°F (175°C).
  • Butter an 11×7 inch (2-quart) baking dish and set aside.

2️⃣ Mix the Batter

  1. In a medium mixing bowl, combine steamed broccoli, garlic-herb cheese spread, eggs, melted butter, and diced onion. Stir until evenly blended.
  2. Add 1 cup of the shredded cheddar, the cornbread mix, and seasonings (garlic powder, dry mustard, onion powder).
  3. Stir until all ingredients are fully incorporated. The batter will be thick and textured.

3️⃣ Assemble and Bake

  1. Pour the batter into the prepared baking dish and smooth the top.
  2. Sprinkle the remaining 1 cup of cheddar evenly over the surface.
  3. Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out with moist crumbs (not wet batter).

4️⃣ Serve

  • Let cool slightly before slicing and serving.
  • Delicious served warm as a side to soups, chili, or grilled meats—or as a main with a dollop of sour cream!
