👩🍳 Directions
1️⃣ Prepare the Pan & Preheat:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan and set it aside.
2️⃣ Make the Crust:
- In a medium bowl, stir together graham cracker crumbs, ⅓ cup sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.
3️⃣ Prepare the Filling:
- In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth and creamy.
- Mix in the vanilla extract.
- Add the eggs one at a time, beating thoroughly after each addition until the batter is silky.
- Stir in the sour cream and banana pudding mix until just combined.
- Gently fold in the sliced bananas, spreading them evenly throughout the mixture.
4️⃣ Assemble & Bake:
- Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
- Bake for 30–35 minutes, or until the center is just set and no longer jiggly.
5️⃣ Cool & Chill:
- Remove the pan from the oven and allow the cheesecake to cool completely at room temperature.
- Once cooled, refrigerate for at least 2 hours (or overnight) to fully set.
