Banana Pudding Cheesecake Squares

👩‍🍳 Directions

1️⃣ Prepare the Pan & Preheat:

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan and set it aside.

2️⃣ Make the Crust:

  1. In a medium bowl, stir together graham cracker crumbs, ⅓ cup sugar, and melted butter until the mixture resembles wet sand.
  2. Press the mixture firmly and evenly into the bottom of the prepared pan to form the crust.

3️⃣ Prepare the Filling:

  1. In a large mixing bowl, beat the cream cheese and 1 cup sugar until smooth and creamy.
  2. Mix in the vanilla extract.
  3. Add the eggs one at a time, beating thoroughly after each addition until the batter is silky.
  4. Stir in the sour cream and banana pudding mix until just combined.
  5. Gently fold in the sliced bananas, spreading them evenly throughout the mixture.

4️⃣ Assemble & Bake:

  1. Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
  2. Bake for 30–35 minutes, or until the center is just set and no longer jiggly.

5️⃣ Cool & Chill:

  1. Remove the pan from the oven and allow the cheesecake to cool completely at room temperature.
  2. Once cooled, refrigerate for at least 2 hours (or overnight) to fully set.
