1ļøāƒ£ Prepare the Filling

  1. Peel and dice the apples into small pieces.
  2. In a pan, melt the butter over medium heat. Add sugar and cinnamon (if using), then stir in the diced apples.
  3. Cook for 7–8 minutes until the apples are tender and caramelized, stirring occasionally.
  4. Remove from heat and let cool slightly.

2ļøāƒ£ Make the Sponge Cake

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Separate the egg whites from the yolks. In a large bowl, beat the egg yolks with sugar and vanilla until pale and fluffy.
  3. In a separate bowl, whip the egg whites until stiff peaks form.
  4. Gently fold the whipped egg whites into the yolk mixture until smooth and well-combined.
  5. Sift together the flour and baking powder, then gently fold them into the batter using a spatula.
  6. Spread the batter evenly on the prepared baking tray.
  7. Bake for 8–10 minutes, or until the sponge is set and soft (don’t overbake!).

3ļøāƒ£ Roll and Fill

  1. Turn the hot sponge cake out onto a clean, damp kitchen towel.
  2. Carefully peel off the parchment paper and immediately roll the sponge in the towel.
  3. Let it cool slightly in the towel to maintain its shape.
  4. Unroll the sponge and spread the caramelized apples evenly over the surface.
  5. Roll the sponge back up tightly, enclosing the filling.
