Ingredients

  • 2 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Directions

  1. In a large mixing bowl, combine the rolled oats and dried cranberries. Stir until the cranberries are evenly distributed throughout the oats so that each cluster will contain a balanced mix of fruit and grains. Set this bowl aside while you prepare the chocolate mixture.
  2. In a small saucepan over low heat, add the white chocolate chips, almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Keeping the heat low is important to prevent the white chocolate from scorching or separating.
  3. Stir the mixture continuously as it warms, allowing the white chocolate chips to melt slowly and blend smoothly with the almond butter and sweetener. The mixture should become glossy, thick, and completely smooth, with no visible lumps. This process should take about 3–5 minutes.
  4. Once the mixture is fully melted and combined, remove the saucepan from the heat immediately to avoid overheating. Pour the warm chocolate mixture directly over the oat and cranberry mixture in the large bowl.
  5. Using a spatula or wooden spoon, gently fold the chocolate mixture into the oats and cranberries. Continue folding until every oat and cranberry is evenly coated and the mixture looks uniformly glossy and sticky.
