Walking Taco Casserole – Frito-Layered Tex-Mex Comfort

  1. Brown the beef:
    In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and fully cooked. Drain any excess grease.
  2. Add flavor:
    Stir in the green chilies, enchilada sauce, and cream cheese. Mix until everything is fully combined and the cream cheese has melted into the mixture. Let simmer for a few minutes to thicken slightly.
  3. Layer the casserole:
    Preheat oven to 350°F (175°C). In a greased 9×13-inch baking dish, layer the ingredients as follows:

    • First, a layer of Fritos corn chips (enough to cover the bottom)
    • Next, spread the warm meat mixture evenly on top
    • Then sprinkle generously with shredded cheese
  4. Bake:
    Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
  5. Add toppings:
    Remove from oven and let cool slightly. Top individual servings with shredded lettuce, diced tomatoes, salsa, and sour cream as desired.
