1️⃣ Make the Parsnip Purée:
- Preheat your oven to 200°C (400°F).
- Place the chopped parsnips in a pot of salted boiling water and cook for 15–20 minutes until tender.
- Drain well, then mash or blend the parsnips with milk and butter until smooth and creamy. Season with salt and pepper to taste. Set aside.
2️⃣ Prepare the Lentil and Spinach Base:
- In a saucepan, heat the olive oil over medium heat. Sauté the chopped onion and garlic for about 5 minutes until translucent and fragrant.
- Add the rinsed lentils and ground cumin. Stir briefly to coat the lentils in the oil and spices.
- Pour in the vegetable stock and bring to a gentle simmer. Cook for 25–30 minutes until the lentils are soft and the liquid is absorbed.
- Stir in the spinach and cook just until wilted. Season with salt and pepper as needed.
