Vasilopita

šŸ‘Øā€šŸ³ Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and grease a round cake pan, or line it with parchment paper for easy removal.
  2. Cream Butter & Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy. This should take about 3–4 minutes. Once fluffy, beat in the eggs one at a time until fully combined.
  3. Add Wet Ingredients: Stir in the milk, vanilla extract, and orange zest. The zest adds a bright, citrusy note that makes the cake feel fresh and vibrant.
  4. Mix Dry Ingredients: Sift together the flour and baking powder to ensure they are evenly distributed. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. The batter should be thick and smooth.
  5. Pour Into Pan: Pour the batter into the prepared cake pan. If you’re including the hidden coin for good luck, make sure it’s wrapped securely in foil and place it in the batter before baking. Be mindful of where you place it, as it will be hidden after baking!
  6. Bake the Cake: Bake for 45–50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. The cake should spring back slightly when touched.
  7. Finish and Serve: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, dust the top with powdered sugar for a sweet finish.
šŸ’” Tip: If you’re adding the coin, make sure to let everyone know before serving so they don’t accidentally bite into it!
