Step-by-Step Method

  1. Make the Special Sauce: In a small bowl, mix the mayonnaise, ketchup, mustard, chopped pickles, salt, and pepper. Stir until smooth and well blended. Adjust the seasoning to taste, ensuring the flavor is balanced between tangy, creamy, and slightly sweet. Let the sauce rest while prepping the burgers so the flavors meld together.
  2. Form and Season Patties: Divide the ground beef into 8 equal portions and shape them into thin patties. Press gently to keep the patties uniform in thickness, which helps them cook evenly. Season each side generously with salt and black pepper right before cooking to enhance the meat’s natural flavor.
  3. Cook the Patties: Heat a skillet or grill over medium-high heat until hot. Cook each patty for 2–3 minutes per side, allowing a deep golden crust to form.
