This Tropical Pineapple Cheesecake is best served chilled, and the caramelized pineapple topping should be added just before serving to keep it fresh and vibrant. If you have leftovers, store the cheesecake in an airtight container in the refrigerator for up to 3 days. You can also freeze the cheesecake (without the topping) for up to 2 months. Simply wrap it tightly in plastic wrap and foil before freezing. To thaw, leave it in the refrigerator overnight and top with fresh pineapple before serving.
Tips:
- If you prefer a firmer cheesecake, let it chill in the refrigerator for longer—up to 8 hours or overnight is ideal.
- For a more intense pineapple flavor, you can blend a small amount of fresh pineapple into the cheesecake filling or use pineapple extract in addition to the pineapple juice.
- If you’re short on time, you can skip the water bath, but it may affect the texture slightly, so be cautious when baking. For a more traditional crust, you could also swap the graham cracker crust for a cookie or a biscuit-based crust.
