Line a baking sheet or large casserole dish with aluminum foil and spray with non-stick cooking spray.
2️⃣ Make the Meatloaf Mixture
In a large bowl, combine ground beef, breadcrumbs, eggs, diced onion, garlic powder, parsley, salt, pepper, and honey BBQ sauce.
Mix thoroughly until everything is well blended. Use your hands or a sturdy spoon for best results.
3️⃣ Shape and Fill
On the prepared pan, shape half of the meat mixture into a rough 8×4 inch loaf. Use your hands to press a cavity into the center, leaving at least 1 inch of meat around the edges.
In a small bowl, combine the macaroni and cheese with the shredded mozzarella.
Spoon the mac and cheese mixture into the cavity of the meatloaf.
Cover with the remaining meat mixture, sealing all sides carefully so the filling is enclosed. Smooth out the top and reshape into a neat loaf.
4️⃣ Bake and Glaze
Bake the meatloaf at 350°F (175°C) for 40 minutes.
While baking, mix ketchup, brown sugar, and yellow mustard in a small bowl for the glaze.
After 40 minutes, remove the meatloaf from the oven and increase temperature to 400°F (200°C).
Spoon or brush the glaze evenly over the top of the meatloaf.
Return to the oven and bake an additional 10–15 minutes, or until the internal temperature reaches 160–165°F (71–74°C) and the glaze is bubbly.
5️⃣ Rest and Serve
Remove from oven and allow the meatloaf to rest for 5–10 minutes before slicing. This helps the juices redistribute and keeps it moist.
Slice thickly to showcase the molten mac and cheese center and serve warm.
