👩‍🍳 Instructions

  1. Prep the cereal: Place the Rice Chex cereal in a large mixing bowl and set aside.
  2. Melt the coating: In a microwave-safe bowl, combine the white chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Add vanilla: Stir the vanilla extract into the melted chocolate mixture.
  4. Coat the cereal: Pour the white chocolate mixture over the Rice Chex and gently toss with a spatula until the cereal is fully coated.
  5. Mix the coating powder: In a separate bowl, stir together the strawberry jello powder and powdered sugar.
  6. Shake to coat: Transfer the coated cereal into a large zip-top bag. Add the jello-sugar mixture. Seal the bag and shake well until the cereal is evenly coated and pink.
  7. Cool and finish: Spread the coated cereal onto a parchment-lined baking sheet to cool and harden. If using, sprinkle crushed freeze-dried strawberries on top for extra texture and strawberry flavor.
