Strawberry Lemonade Buttermilk Cake

Instructions

1. Preheat the Oven:

  1. Set oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan. Set aside.

2. Make the Cake Batter:

  1. In a large bowl, beat the softened butter and granulated sugar together for 3–4 minutes, until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Stir in the lemon zest, lemon juice, and vanilla extract.

3. Combine Dry Ingredients:

  1. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

4. Bring It All Together:

  1. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined—do not overmix.
  2. Gently fold in the chopped, patted-dry strawberries until evenly distributed.
