Instructions
1. Preheat the Oven:
- Set oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan. Set aside.
2. Make the Cake Batter:
- In a large bowl, beat the softened butter and granulated sugar together for 3–4 minutes, until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Stir in the lemon zest, lemon juice, and vanilla extract.
3. Combine Dry Ingredients:
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
4. Bring It All Together:
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined—do not overmix.
- Gently fold in the chopped, patted-dry strawberries until evenly distributed.
