Strawberry Crunch Cheesecake Bites

  • 10 Golden Oreos, crushed
  • 10 freeze-dried strawberries, crushed (or ½ cup strawberry Jell-O powder)
  • 3 tbsp melted butter

Optional Toppings:

  • Whipped cream
  • Extra strawberry crunch
  • Fresh strawberry slices

👩‍🍳 Directions

1️⃣ Prep the Pan:

  1. Preheat oven to 325°F (160°C).
  2. Line a mini muffin tin or regular muffin tin with paper liners.

2️⃣ Make the Crust:

  1. In a bowl, combine the crushed Golden Oreos and melted butter.
  2. Press about 1 tsp into each mini liner (or 1 tbsp for regular size).
  3. Bake for 5–6 minutes. Remove from oven and let cool slightly.

3️⃣ Prepare the Cheesecake Filling:

  1. In a medium bowl, beat cream cheese until smooth.
  2. Add sugar and mix until fully combined.
  3. Beat in sour cream, vanilla, and salt.
  4. Add eggs one at a time, mixing gently until just blended.

4️⃣ Fill & Bake:

  1. Spoon the cheesecake filling over the crusts, filling nearly to the top.
  2. Bake for 15–18 minutes (mini) or 22–25 minutes (regular), until centers are just set.
  3. Let cool to room temperature, then refrigerate at least 2 hours.
