1. Preheat the Oven & Pan
Preheat your oven to 400°F (200°C). Add 1 tablespoon of oil to a 9–10 inch cast-iron skillet and place it in the oven to heat as the oven preheats. This will help create a crispy crust when the batter is poured in.
2. Make the Batter
- In a medium bowl, whisk together the egg, honey, and melted butter until well combined.
- Add the cornmeal, flour, baking soda, salt, sour cream, and milk. Whisk gently until just combined—do not overmix.
- Fold in the drained jalapeños for a spicy kick throughout the batter.
3. Bake the Cornbread
- Carefully remove the hot skillet from the oven and tilt it to ensure the bottom is coated with oil.
- Immediately pour the batter into the pan—it will sizzle slightly. Spread evenly.
- Return to oven and bake for 20–25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
