Spicy Jalapeño Cornbread with Sweet Lime Honey Butter

👨‍🍳 Instructions

1. Preheat the Oven & Pan

Preheat your oven to 400°F (200°C). Add 1 tablespoon of oil to a 9–10 inch cast-iron skillet and place it in the oven to heat as the oven preheats. This will help create a crispy crust when the batter is poured in.

2. Make the Batter

  1. In a medium bowl, whisk together the egg, honey, and melted butter until well combined.
  2. Add the cornmeal, flour, baking soda, salt, sour cream, and milk. Whisk gently until just combined—do not overmix.
  3. Fold in the drained jalapeños for a spicy kick throughout the batter.

3. Bake the Cornbread

  1. Carefully remove the hot skillet from the oven and tilt it to ensure the bottom is coated with oil.
  2. Immediately pour the batter into the pan—it will sizzle slightly. Spread evenly.
  3. Return to oven and bake for 20–25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
