Spiced Chicken Recipe

  1. Prep the Chicken: Cut the chicken into 4 pieces, then into 8 parts. Apply lime juice and leave for 10 minutes. Rinse thoroughly and set aside.
  2. Cook the Spices: In a skillet, sauté the ground spices until fragrant, then add the herbs (galangal, kaffir lime leaves, bay leaves, lemongrass). Stir for 2 minutes to release the aromas.
  3. Simmer: Pour in the water and bring to a boil. Add the chicken pieces, along with the sugar, salt, totole, and seasonings. Stir well.
  4. Cook Until Tender: Cook the chicken until fully cooked, ensuring the spices penetrate the meat for maximum flavor.
  5. Remove & Rest: Once the chicken is cooked, remove it from the pan and drain any excess liquid. Let it rest for a few minutes before serving.
  6. Serve: Slice the chicken and serve with the garnish ingredients (fried onions, celery slices, chili sauce, lime wedges). Enjoy your fragrant and flavorful spiced chicken!
