Southern-Style Potato Salad

1️⃣ Cook the Potatoes

  1. Place cubed potatoes in a large pot and cover with cold water.
  2. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10–15 minutes, or until fork-tender.
  3. Drain and let the potatoes cool to room temperature.

2️⃣ Make the Dressing

  • In a large bowl, whisk together mayonnaise, yellow mustard, apple cider vinegar, and pickle relish until smooth and creamy.

3️⃣ Combine & Mix

  1. Add the cooled potatoes to the bowl with the dressing.
  2. Fold in chopped hard-boiled eggs, finely chopped onion, and celery.
  3. Gently mix until everything is evenly coated. Avoid overmixing to keep the potatoes from breaking down too much.

4️⃣ Season & Chill

  • Season with salt and pepper to taste.
  • Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld.

5️⃣ Serve
