Southern Hush Puppies

1️⃣ Prepare the Frying Oil

  • Heat vegetable oil in a deep pot or fryer to approximately 365°F (185°C).
  • Use a thermometer to maintain consistent heat for best frying results.

2️⃣ Make the Batter

  1. In a large mixing bowl, combine finely diced onion and granulated sugar.
  2. Add the beaten eggs and mix thoroughly until smooth and combined.
  3. Gradually stir in the self-rising flour and cornmeal until a thick, spoonable batter forms.

3️⃣ Fry the Hush Puppies

  1. Using a spoon or small cookie scoop, carefully drop spoonfuls of batter into the hot oil.
  2. Do not overcrowd the pot—work in batches if needed to maintain oil temperature.
  3. Fry for about 1–2 minutes per side, turning occasionally until hush puppies are golden brown and puffed.

4️⃣ Drain and Serve

  • Remove hush puppies with a slotted spoon and transfer to a plate lined with paper towels.
  • Let drain briefly and serve while hot for best texture.
