- Use a thermometer to maintain consistent heat for best frying results.
2️⃣ Make the Batter
- In a large mixing bowl, combine finely diced onion and granulated sugar.
- Add the beaten eggs and mix thoroughly until smooth and combined.
- Gradually stir in the self-rising flour and cornmeal until a thick, spoonable batter forms.
3️⃣ Fry the Hush Puppies
- Using a spoon or small cookie scoop, carefully drop spoonfuls of batter into the hot oil.
- Do not overcrowd the pot—work in batches if needed to maintain oil temperature.
- Fry for about 1–2 minutes per side, turning occasionally until hush puppies are golden brown and puffed.
4️⃣ Drain and Serve
- Remove hush puppies with a slotted spoon and transfer to a plate lined with paper towels.
- Let drain briefly and serve while hot for best texture.
