5. Beat Until Creamy

  1. Let the mixture cool undisturbed for 5–10 minutes. It should thicken slightly but still be pliable. Using a wooden spoon or heat-safe spatula, beat the candy vigorously. As you stir, the mixture will gradually lose its glossy sheen, become opaque, and grow noticeably thicker. This transformation indicates air is being incorporated, helping the candy develop its signature soft, creamy texture.

6. Shape

  1. Quickly drop teaspoon-sized amounts of the thickened candy onto the powdered sugar–dusted surface. Work swiftly, as the mixture sets rapidly once it becomes opaque. Each portion should form a small, rounded mound that holds its shape without spreading.

7. Cool and Store

  1. Allow the peppermint drops to cool completely at room temperature until firm. Once cooled, store them in an airtight container, layering with wax paper to prevent sticking. Over time, they maintain their creamy interior while developing a delicate shell.

Notes

Humidity can affect candy texture, so these turn out best on a dry day. If the mixture begins to harden before you finish shaping, you can warm the pan briefly to soften it again. These mints keep well for several weeks when stored properly, making them ideal for gifting or holiday snacking.
