Slow Cooker Pork Chops and Sweet Potatoes

👩‍🍳 Instructions

  1. Layer the base: Add the cubed sweet potatoes and diced onion to the bottom of the slow cooker.
  2. Season: Sprinkle the cinnamon, nutmeg, salt, and pepper evenly over the sweet potatoes and onions.
  3. Add the pork: Place the pork chops directly on top of the sweet potatoes.
  4. Pour the chicken broth, orange juice, and apple cider vinegar over the pork chops.
  5. Sweeten: Sprinkle the brown sugar over everything.
  6. Cook: Cover and cook on low for 8 hours or until the pork is tender and sweet potatoes are soft.

💡 Tips:

  • Add a pinch of cayenne for a hint of heat to balance the sweetness.
  • Use bone-in pork chops for even more flavor if desired.
  • To thicken the juices into a glaze, remove the lid during the last 30 minutes of cooking or transfer juices to a saucepan and reduce over medium heat.
