Slow Cooker Creamy Chicken Potato Soup

👨‍🍳 Instructions

1️⃣ Layer Ingredients in the Slow Cooker

  1. Pour 1½ cups of bone broth or water into the bottom of your slow cooker.
  2. Place the chicken breasts directly into the liquid.
  3. Add the cream cheese, shredded cheddar, baby potatoes, and ranch seasoning on top.

2️⃣ Cook Low and Slow

  • Cover and cook on high for 4 hours or low for 6 hours, until the chicken and potatoes are tender and fully cooked.

3️⃣ Shred Chicken & Finish Soup

  1. Once cooking time is up, remove the chicken breasts and shred them using two forks.
  2. Return shredded chicken to the slow cooker.
  3. Stir in the baby spinach and bacon crumbles. Mix until the spinach is wilted and the soup is evenly creamy.

4️⃣ Serve

  • Ladle into bowls and serve hot.
  • Optional toppings: extra bacon, shredded cheese, chopped chives, or a dollop of sour cream.
