1️⃣ Layer Ingredients in the Slow Cooker
- Pour 1½ cups of bone broth or water into the bottom of your slow cooker.
- Place the chicken breasts directly into the liquid.
- Add the cream cheese, shredded cheddar, baby potatoes, and ranch seasoning on top.
2️⃣ Cook Low and Slow
- Cover and cook on high for 4 hours or low for 6 hours, until the chicken and potatoes are tender and fully cooked.
3️⃣ Shred Chicken & Finish Soup
- Once cooking time is up, remove the chicken breasts and shred them using two forks.
- Return shredded chicken to the slow cooker.
- Stir in the baby spinach and bacon crumbles. Mix until the spinach is wilted and the soup is evenly creamy.
4️⃣ Serve
- Ladle into bowls and serve hot.
- Optional toppings: extra bacon, shredded cheese, chopped chives, or a dollop of sour cream.
