Slow Cooker Chicken and Dumplings

I love this quick and easy recipe, and it’s a wonderful treat for beginners—simple steps, cozy flavors, and a slow cooker that does most of the work for you.

Start the Base

  1. Scatter the chopped onion across the bottom of a large slow cooker. Spreading the onions evenly helps them soften slowly as the dish cooks, releasing their sweetness and creating a flavorful foundation.
  2. Place the boneless, skinless chicken breasts directly on top of the onions. Season generously with the dried oregano, kosher salt, and freshly ground black pepper. Proper seasoning at the start ensures the chicken absorbs flavor throughout the long cooking time.
  3. Pour the cream of chicken soup and the chicken broth over the chicken, making sure the liquid covers most of the meat. Add the fresh thyme sprigs and bay leaf, nestling them into the liquid so they can infuse their aroma as the mixture simmers.
  4. Cover the slow cooker with the lid and cook on High for about 3 hours. Avoid lifting the lid during this time, as opening it releases steam and can slow down the cooking process.
