Qatari Madrooba Recipe

  1. Soak the Wheat
    Wash the cracked wheat and soak it in water for 30 minutes. Drain before using.

  2. SautƩ the Aromatics
    In a large pot, melt the butter or ghee. SautƩ the chopped onion until golden brown.

  3. Add Garlic
    Stir in the minced garlic and cook for about 1 minute until fragrant.

  4. Spice & Chicken Time
    Add the chicken pieces and all the spices. Stir well and cook for a few minutes to coat the chicken.

  5. Simmer
    Pour in the water or chicken broth. Bring to a boil, then reduce the heat and cook until the chicken is tender (about 30–40 minutes).

  6. Add Cracked Wheat
    Stir in the soaked and drained wheat. Lower the heat and cook gently, stirring occasionally to prevent sticking.

  7. Shred Chicken
    Once the chicken is very tender, remove it, shred it, and return it to the pot.

  8. Cook Until Creamy
    Continue to cook the mixture until it thickens to a porridge-like consistency. Stir often.

  9. Final Touches
    Adjust salt to taste. Serve hot, garnished with fresh parsley or cilantro if desired.
