1️⃣ Prepare the Marshmallow Mixture
- In a large pot over low heat, melt the unsalted butter.
- Add the mini marshmallows and stir constantly until fully melted and smooth.
- Stir in the pumpkin pie spice and vanilla extract.
- If using, add orange food coloring and stir until evenly tinted.
2️⃣ Mix in the Cereal
- Remove the pot from heat and quickly fold in the Rice Krispies cereal.
- Mix until the cereal is evenly coated with the spiced marshmallow mixture.
3️⃣ Shape the Treats
- Grease a 9×13-inch baking dish or line it with parchment paper.
- Using a greased spatula or wax paper, press the mixture evenly into the pan without compacting too hard (to keep them soft and chewy).
4️⃣ Decorate & Cool
- Let the treats cool for at least 30 minutes.
- If desired, drizzle melted white chocolate over the top and sprinkle with pumpkin-shaped candy or festive fall sprinkles.
5️⃣ Slice & Serve
- Once set, cut into squares or rectangles.
- Serve and enjoy immediately, or store in an airtight container for up to 3 days.
