Pumpkin Spice Rice Krispie Treats

1️⃣ Prepare the Marshmallow Mixture

  1. In a large pot over low heat, melt the unsalted butter.
  2. Add the mini marshmallows and stir constantly until fully melted and smooth.
  3. Stir in the pumpkin pie spice and vanilla extract.
  4. If using, add orange food coloring and stir until evenly tinted.

2️⃣ Mix in the Cereal

  1. Remove the pot from heat and quickly fold in the Rice Krispies cereal.
  2. Mix until the cereal is evenly coated with the spiced marshmallow mixture.

3️⃣ Shape the Treats

  • Grease a 9×13-inch baking dish or line it with parchment paper.
  • Using a greased spatula or wax paper, press the mixture evenly into the pan without compacting too hard (to keep them soft and chewy).

4️⃣ Decorate & Cool

  • Let the treats cool for at least 30 minutes.
  • If desired, drizzle melted white chocolate over the top and sprinkle with pumpkin-shaped candy or festive fall sprinkles.

5️⃣ Slice & Serve

  • Once set, cut into squares or rectangles.
  • Serve and enjoy immediately, or store in an airtight container for up to 3 days.
