👨🍳 Instructions
1️⃣ Make the Cake
- Preheat oven to 350°F (175°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- In a large mixing bowl, whisk together pumpkin purée, oil, brown sugar, white sugar, eggs, coffee, and vanilla until smooth and well combined.
- Gradually add the dry ingredients to the wet ingredients and stir just until no flour streaks remain.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan before frosting.
2️⃣ Make the Frosting
- In a large bowl, beat the softened butter and cream cheese together until light and creamy.
- Gradually mix in powdered sugar, followed by brewed coffee, cinnamon, and vanilla extract.
- Beat until smooth and fluffy, adjusting consistency with more sugar or coffee if needed.
3️⃣ Frost and Serve
