Pumpkin Spice Latte Cake

👨‍🍳 Instructions

1️⃣ Make the Cake

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a large mixing bowl, whisk together pumpkin purée, oil, brown sugar, white sugar, eggs, coffee, and vanilla until smooth and well combined.
  4. Gradually add the dry ingredients to the wet ingredients and stir just until no flour streaks remain.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool completely in the pan before frosting.

2️⃣ Make the Frosting

  1. In a large bowl, beat the softened butter and cream cheese together until light and creamy.
  2. Gradually mix in powdered sugar, followed by brewed coffee, cinnamon, and vanilla extract.
  3. Beat until smooth and fluffy, adjusting consistency with more sugar or coffee if needed.
