Poppy Seed Roll Recipe with Walnut and Raisin Filling

Ingredients

Dough (Yeasted Sweet Dough):

  • 500 g all-purpose flour
  • 80 g sugar
  • ¼ tsp salt
  • 9 g instant dry yeast
  • 250 ml warm milk (about 40°C/105°F)
  • 2 large eggs, room temperature
  • 100 g unsalted butter, melted and cooled
  • Zest of 1 lemon (optional but recommended)

Poppy Seed Filling:

  • 400 g poppy seeds
  • 500 ml milk
  • 150 g sugar (or to taste)
  • 100 g raisins (soaked in hot water or rum)
  • 100 g walnuts or almonds, finely chopped
  • 80 g honey
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 2 tbsp butter
  • 2 egg whites (optional, makes filling firmer)

Glaze:

  • 200 g powdered sugar
  • 3–4 tbsp lemon juice or water
  • A few drops of almond extract (optional)

Topping:

  • Chopped walnuts
  • Poppy seeds (optional)
