Pesto Butter Chicken with Roasted Tomatoes

👩‍🍳 Instructions

Step 1: Roast the Tomatoes 🍅

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes with olive oil, salt, pepper, and dried herbs.
  3. Roast for 15–20 minutes until blistered and soft. Set aside.

Step 2: Cook the Chicken 🍗

  1. Season chicken with salt, pepper, Cajun seasoning (optional), and set aside.
  2. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat.
  3. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and keep warm.

Step 3: Make the Pesto Butter Sauce 🧄🧈

  1. In the same skillet, melt remaining 1 tbsp butter. Add garlic and sauté for 30 seconds.
  2. Stir in heavy cream, pesto, Parmesan cheese, lemon juice, and chili flakes (if using). Simmer 2–3 minutes until slightly thickened.
