Instructions:

  1. Combine Ingredients: In a mixing bowl, combine the 1/4 cup of unseasoned mashed potatoes, 2 tablespoons of milk, 1 teaspoon of vanilla extract, and a pinch of salt. Stir these ingredients until fully combined.
  2. Add the Sugar: Gradually stir in the 1 package (16 ounces) of confectioners’ sugar. Mix until a dough-like consistency is achieved. You may need to adjust the amount of confectioners’ sugar depending on the texture of the dough.
  3. Chill the Dough: Refrigerate the dough for about 1 hour, allowing it to chill and firm up slightly.
  4. Prepare the Surface: Sprinkle a light dusting of confectioners’ sugar on a cutting board or waxed paper to prevent sticking. Once the dough is chilled, roll it out into a large rectangular shape on the prepared surface.
  5. Add Peanut Butter: Spread enough peanut butter on the top layer of the dough to cover it evenly. You can adjust the amount of peanut butter based on your preference for a thicker or thinner layer.
  6. Roll and Chill: Carefully roll the dough into a jelly roll shape. Once rolled, refrigerate it for another hour to allow the dough to firm up and set.
  7. Slice and Serve: After the dough has chilled, slice it into pinwheels for serving. These bite-sized treats are perfect for snacking or sharing!
