Oven-Baked Salmon & Cabbage “Buns”

👨‍🍳 Instructions

  1. Preheat the Oven: Preheat your oven to 400ºF (200ºC).
  2. Prepare the Cabbage Buns: Brush the cabbage rounds with olive oil on both sides. Season with salt and pepper, then arrange them on a baking sheet. Roast for 10 minutes until the cabbage is slightly tender and starting to brown.
  3. Make the Salmon Patties: In a bowl, mix together the chopped salmon, softened cream cheese, ¼ cup mozzarella, smoked paprika, Dijon mustard, dill, salt, and pepper. Form the mixture into 4 small patties. Ensure they are compact enough to hold together while baking.
  4. Assemble the Dish: After the cabbage has roasted, remove from the oven. Place one salmon patty on each cabbage round. Sprinkle the remaining ¼ cup mozzarella over the patties.
  5. Bake: Return the baking sheet to the oven and bake for another 10–12 minutes, or until the salmon is cooked through and the cheese is melted and golden.
  6. Serve: Remove from the oven and serve hot. For an extra touch of freshness, squeeze a little lemon juice or add a dollop of Greek yogurt on top.
