- Preheat the oven:
Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or similarly sized oven-safe dish and set aside.
- Cook the macaroni:
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until just al dente. Drain well and set aside. The pasta will continue to soften slightly while baking.
- Prepare the cheese sauce:
In a large saucepan, melt the butter over medium heat. Once fully melted and bubbling, whisk in the flour to create a smooth roux. Cook the roux for 1 to 2 minutes, whisking constantly, to eliminate any raw flour taste and ensure a silky sauce base.
- Add liquids:
Slowly pour in the milk and Oktoberfest beer while continuing to whisk. Cook the mixture for 4 to 6 minutes, stirring frequently, until thickened to a creamy consistency that coats the back of a spoon.
