Instructions:
- Prepare the Peppermint Centers: In a bowl, combine 2 1/2 cups powdered sugar, 2 tablespoons softened unsalted butter, 2 tablespoons heavy cream, 1 teaspoon peppermint extract, and 1/2 teaspoon vanilla extract. Mix well until a smooth dough forms.
- Optional Food Coloring: If you want to add a festive touch, stir in a few drops of red or green food coloring until the dough is evenly colored. This step is optional, but it adds a fun, holiday vibe to your peppermint patties.
- Form the Patties: Roll the dough into small balls, about 1 inch in size, and flatten them into patties. Place them on a parchment-lined tray to prevent sticking.
- Chill the Patties: Place the tray of patties in the freezer for 15–20 minutes, or until they are firm. This helps them hold their shape when dipped in chocolate.
- Make the Chocolate Coating: While the peppermint centers chill, melt 1 1/2 cups of semi-sweet chocolate chips with 1 tablespoon of coconut oil. You can melt them in a microwave-safe bowl in 30-second intervals, stirring after each interval until the chocolate is smooth and fully melted.
- Coat the Patties: Once the peppermint centers are firm, dip each patty into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the patty out of the chocolate, allowing the excess to drip off. Place the coated patties back onto the parchment-lined tray.
