No-Bake Funfetti Oreo Icebox Cake

👩‍🍳 Instructions

1️⃣ Prep the Cream Filling

  1. In a large bowl, gently fold vanilla extract into the whipped cream until smooth.
  2. Stir in rainbow sprinkles until evenly distributed throughout the whipped cream.

2️⃣ Soften the Oreos

  1. Pour the milk into a shallow dish.
  2. Quickly dip each Oreo into the milk for 1–2 seconds—don’t soak them, or they’ll become mushy!

3️⃣ Layer the Cake

  1. In a 9×9-inch dish (or similar-sized pan), create a base layer of the softened Oreos.
  2. Spread a layer of the whipped cream mixture over the cookies.
  3. Repeat the layers, finishing with a final layer of whipped cream on top.

4️⃣ Chill

  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours (overnight is best) so the cookies can soften and the flavors can meld together.

5️⃣ Serve & Garnish

  1. Before serving, sprinkle additional rainbow sprinkles on top for a festive touch.
  2. Slice into squares and enjoy each creamy, crunchy, colorful bite!
