1. Prepare the Crust:
- Mix graham cracker crumbs, sugar, and melted butter in a bowl until well combined.
- Press the mixture firmly into the bottom of a mini muffin tin or silicone mold.
- Freeze for 10 minutes to set.
2. Make the Cheesecake Filling:
- Beat cream cheese and granulated sugar until smooth and creamy.
- Add vanilla extract and mix well.
- In a separate bowl, whip the cold heavy cream to stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spoon or pipe the filling onto the crust layer and freeze for at least 30 minutes.
3. Prepare the Strawberry Layer:
- In a small saucepan, combine strawberries, sugar, and lemon juice.
- Cook over medium heat, stirring often, until the strawberries break down and the mixture thickens (about 5–7 minutes). Let cool completely.
- Spread a thin layer of the cooled strawberry mixture over the frozen cheesecake filling.
4. Make the Crunch Topping:
- Mix crushed golden Oreos, crushed freeze-dried strawberries, and melted butter in a small bowl until evenly combined.
- Sprinkle generously over the strawberry layer, pressing gently to adhere.
