🧾 Ingredients

For the Salad:

  • 2 cups cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ cup Kalamata olives
  • ¼ cup green olives
  • 1 cup grilled chicken breast, chopped
  • ½ cup feta cheese, crumbled
  • 1 tbsp fresh basil, chopped
  • ¼ tsp dried oregano
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

👨‍🍳 Instructions

  1. Prep the Ingredients: Slice the cucumbers, halve the cherry tomatoes, thinly slice the red onion, and chop the grilled chicken into bite-sized pieces.
  2. Assemble the Salad: In a large mixing bowl, toss together the sliced cucumbers, halved tomatoes, sliced onions, Kalamata and green olives, and the grilled chicken. This forms the fresh base of the salad.
  3. Add the Flavor: Sprinkle the salad with dried oregano, fresh basil, salt, and pepper. The oregano and basil give the salad an authentic Mediterranean flavor.
  4. Dress it Up: Drizzle with olive oil and lemon juice, then toss gently to coat everything in the dressing. The olive oil provides richness, and the lemon juice adds a refreshing, zesty finish.
