Mediterranean Chicken Plate with Veggies & Fluffy Rice

👩‍🍳 Directions

1️⃣ Cook the Chicken

  1. Season the chicken with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat.
  3. Place chicken in the pan and cook for 4–5 minutes per side, or until golden and fully cooked through.
  4. Optional: Add a squeeze of fresh lemon juice at the end for brightness.

2️⃣ Make the Rice

  1. While chicken cooks, warm your pre-cooked rice (or make fresh if needed).
  2. Stir in butter or olive oil, a pinch of salt, and lemon juice or parsley if desired.
  3. For presentation, shape the rice using a small bowl and invert onto the plate.

3️⃣ Steam the Veggies

  1. In a steamer basket or small pot, steam the broccoli, carrots, and asparagus for 4–6 minutes until tender but still crisp.
  2. Season lightly with salt and pepper once done.

4️⃣ Plate Everything

  1. Arrange a bed of fresh spinach leaves on your plate.
  2. Add the rice dome and steamed vegetables next to it.
  3. Place chicken slices on the side or across the spinach.
  4. Top with Kalamata olives and a small spoonful of mustard on the side for dipping.
